About ε-Polylysine

The polylysine manufactured by JNC is ε-poly-L-lysine (ε-Polylysine).
ε-Poly-L-lysine has a unique chemical structure in which the essential amino acid L-lysine is peptide-bonded at the side chain amino group (ε-position).
In this structure, the α-amino group has strong cationic properties, making it a highly cationic polymer.
In addition, it is pure Polylysine (free form) that does not contain salts.
Since it does not contain salts, corrosion of equipment can be suppressed.

Polymerization degree of ε-Polylysine

ε-Polylysine is a polymer composed of 25-35 L-lysines.
It is a highly uniform polymer because it is fermented and produced by microorganisms.

Method for producing ε-Polylysine

ε-Polylysine is produced by microbial fermentation.
Even in the purification process, no synthetic steps such as saltforming are preformed. ε-Polylysine is safe to use as a completely natural product.

ε-Polylysine is an extremely safe substance produced by microbial fermentation.
ε-Polylysine has been confirmed to be highly safe by various studies such as acute toxicity, subacute toxicity, chronic toxicity, mutagenicity, ADME.

Acquired GRAS certification from the US FDA

JNC's ε-Polylysine is recognized as a global standard food preservative because it has received GRAS certification from the US FDA.
As of August 2, 2022, ε-polylysine produced by JNC is the only ε-Polylysine that has received GRAS certification from the US FDA.

Polylysine includes α-Polylysine, ε-Polylysine (free form), and ε-Polylysine hydrochloride, but the Polylysine manufactured by JNC is ε-Polylysine (free form). Please note that only JNC Polylysine is GRAS certified. Please check below for details.

Food additive
ε-Polylysine manufactured by JNC is approved for use as a food additive, mainly for preservation purposes.

Japan: Listed as a food preservative in the List of Existing Additives. (Published by the Ministry of Health and Welfare on April 16, 1996.)
US: FDA GRAS
South Korea: Registered as a food additive.
China: Registered as a preservative.
